A small flock. Lambs arrive in batches, so lamb comes in short seasons rather than year round.

Beef is sold as a share of the live animal — whole, half or quarter. You choose the cut sheet and pay the processor directly; we walk you through it if it's your first time.

A quarter fills a shelf. A whole fills a freezer and lasts a family most of a year. Both come back from the processor cut, wrapped and frozen — not a side of beef on your driveway.

The guardian dogs and the donkey are staff, not stock — they keep the flock calm and the coyotes honest. The goats are a different story: they're available live, or as a whole animal share.

How buying an animal share works You are purchasing an ownership share in a live animal from Green Isle Ranch — not individual cuts or packaged meat. Depending on availability, you may reserve a quarter, half, or whole animal. Ownership of your share is transferred and documented before slaughter. Green Isle Ranch can arrange transportation of the live animal to a custom-exempt processor on behalf of the owners. You will submit your cutting instructions and pay the processor directly for slaughter, aging, cutting, wrapping, and any additional processing requested. Processing costs are separate from the price of your animal share. When processing is complete, you may pick up your order directly from the processor. Green Isle Ranch may also coordinate pickup and transportation of your finished order as an optional service, subject to the processor's policies. Any applicable transportation charge will be disclosed separately. All packages will be marked “Not for Sale.” The finished meat is for the owner's personal household use and may not be resold.
